Here is a list of some of my favorite recipes. If you try them, let me know what you think!

Brand New Vegan–lots of different recipes. I was not impressed with his chili recipe, but all the others I’ve made have been good.

Tofu and Veggies in Peanut Sauce. I substitute veggies listed for whatever I have on hand and it always turns out great. I serve over quinoa instead of rice, since there are arsenic concerns with rice.

Spicy Chickpea and Quinoa Bowl. Can you tell I love quinoa?

Instant Pot Vegan Sloppy Joes. I love my Ipot! I haven’t made these for awhile but I should. I have homemade Worcestershire sauce in the the fridge.

Vegan Lentil Walnut Loaf. For the record. I do not use any oil. I saute using either vegetable broth or water, or I will just start the veggies on low heat and allow them to release their own water. The purpose of the oil is to keep the veggies from sticking, but I’ve never had a problem and I save about 150 calories a tablespoon.

Sheet Pan Cauliflower Fajitas.

Barley and Bean Soup.

Cheezy Chickpeas. For the record, you can sub soy sauce for the liquid aminos.

Spicy Black Bean Soup. Black bean soup is one of my absolute favorites when the weather turns colder!

Easy Homemade Hummus. This is my base recipe for hummus. I usually spice it up with cayenne, sambal oelek, and more cumin than the recipe calls for. I also have started adding in a smidge of onion salt, but not too much. I am watching my sodium.
