Where does the time go? Seriously, I feel like I’ve never had so much going on in my life. This whole past week is a big blur and today I was up and going nearly all day. I woke up about 6:30 and caught up on the WFPB (whole foods plant based) summit interviews for yesterday and today and then after breakfast I decided to go grocery shopping. I ended up going to Sam’s, Walmart, and HyVee and three hours later, I came home with enough produce to feed a small army. After eating a quick apple with a tiny bit of natural peanut butter, I put groceries away and then I started food prepping. I made sour cream and a walnut balsamic vinaigrette salad dressing, cleaned up my mess, and then posted to my discussion board and helped April give Emma a bath after her haircut. By then it was time to start dinner, which was a veggie stir fry with peanut sauce over brown rice. It’s one of my favorite dinners. April and Ben both ate with us–the first time that has happened in months. After eating and cleaning up the kitchen, I was finally able to relax for a few minutes. I feel accomplished, but there is so much I still want to get done, and the day is over! It’s is already 9:00, but I realized that it’s been a long time since I posted so I wanted to post something quick before I head up to bed to read for a few minutes before I go to sleep.
Tomorrow is church and then I hope to dedicate the rest of the day to school work, but it’s supposed to be really nice outside so I’d love to squeeze a walk in. I also need to make my lunch (a white bean and avocado salad) and some hummus sometime tomorrow. I’ll say it again–I will be very happy when I am finished with work. I truly want to be productive and keep up with my house and cooking. I have been working for a year and a half now and while I’ve enjoyed aspects of it, I do miss being home. Plus with being in school again, I will have plenty to keep me busy. Also, I will have some exciting news to share in my next post–a new opportunity that is a bit scary, but I’m really excited because I think it will be really good for me. Stay tuned!
