I didn’t realize it had been so long since I last wrote here. Nothing super exciting is happening these days so I don’t think to come here. We are stuck in between the battle between winter and spring, which is the absolute worst! We get teased with some nice days and then it snows. We have not gotten much snow this year, for which I am very thankful, but I am just ready for some nice 70 and 80 degree days with sun. Today is finally supposed to warm up. Yesterday we barely got above freezing and the day before that was even more miserable. I am thankful that spring is making its appearance on the calendar in just four short days. I am praying that with that, spring weather will come and stay. I have my spring break next week and am looking forward to getting caught up on reading. I am also going to the dentist and getting my hair done next week, as well as taking Maddie and Emma to get their rabies shots. Working makes it tough to get things done, so I am really looking forward to May 24th, the day I will say goodbye to working, at least for awhile.
My and Dan’s healthy lifestyle continues to go very well. I am getting the hang of vegan cooking and finding tons of recipes to try. We rarely repeat meals, which is fun, but sometimes it’s a bit nerve wracking too. So far there are only a few meals that have been less than stellar. A couple that I have repeated are my lentil “meat” loaf and a lentil/barley mash that is really good reheated for lunches during the week. Last night I made a repeat spicy black bean soup that Dan likes. Normally I put tofu in my black bean soup, but since I didn’t have any I just used beans and lots of peppers. I also bought a high powered blender so that I can more easily make hummus and smoothies, the later of which will become a staple when the weather warms up. For now, I’m eating oatmeal, which is much more conducive to the cold mornings we are having. I tried a smoothie the other day and didn’t warm up for hours. Live and learn…
Sadly, since I am spending so much of my free time looking for recipes and cooking (and cleaning up the mess that comes along with cooking), I have neglected my Bible study time. My goal for next week is to get back into the habit of making that my first priority. It will be much easier because I won’t be so rushed for time.
